W12 - Brew 40

Mash

Started at 1410

  • pilsner malt - 5.5 (did 5.7)
  • Munich Malt - 1.36 (did 1.0)
  • Special B - 0.6
  • Caramunich - 0.5
  • Wheat Malt - 0.4
  • Melanoidin - 0.3

total grains: 8.5kg (wow GF should take max 9kg)

  • Temp - 67
  • Time - 90 mins

stirred at 15mins and 30mins and lots more

Boil

Started at 1630.

  • Brewers gold 27g 26IBU 6% at 60 min (sub hallertauer at 4.9%) 20g
  • Hallertauer Mittelfrueh 6IBU 4.3% at 30 min (got). 17g
  • 1.2kg of sugar at half way
  • Styrian Goldings 5IBUs 3.8% at 15 min (Sub columbus 17.3% like I did before). 20g
  • Protofloc at 15 mins

Should be a 90 minute boil. Done a 70 minute boil.

Cool and ferment

OG should be around 1090 for 10%. Have got 1082. Fine.

Fermenting at 20c in fridge with heater in it. Will increase to 22 in next 4 days.

yeast

16th Oct - have turned off the heat in the fridge as can’t hear any more fermenting, and am now letting it cold condition as temperatures outside are around 3 degrees to 12 degrees.

23rd Oct (3 weeks) have cold crashed the beer at 3 degrees.

Keg

On 12th Dec. FG was 1012. Tasting great.
